Shrimp and Avocado Quesadilla

I had something similar to this recipe in a Mexican restaurant awhile back and this is my attempt to duplicate it in a reasonably easy fashion. It turned out so well, I’ve had it twice this week and I am sharing it with you here. :)

———–INGREDIENTS———–

6 oz raw shrimp – I like the medium-sized shrimp for this and even chop them in half to spread them around the tortilla.

1 tsp chopped garlic

crushed red pepper (optional)

olive oil

1/2 cup shredded cheese - I use a mix of Mexican cheeses from Sargento (Queso Quesadilla, Asadero, Queso Gallego, Manchego & Angejo Enchilado) but any shredded cheese will do. You can even go low-fat to reduce fat and calories.

4 whole wheat tortillas (Again, any tortilla will work if you prefer white-flour or low-carb ones)

1 small to medium sized avocado, pitted, peeled and chopped

2 Roma tomatoes, chopped

1/4 red onion, chopped

2-3 tablespoons fresh cilantro, chopped

1/2 teaspoon jalapeno, chopped

juice from half a lime

1/4 teaspoon kosher salt

———–INSTRUCTIONS———–

In a small bowl, mix together avocado, tomato, onion, cilantro, jalapeno, lime juice and salt.  Once you stir this up, you can mash the avocado a bit to make it more like guacamole, but I really like the chunkiness of leaving it as is.

Using a large sauté pain on medium heat, sauté shrimp with olive oil, garlic and crushed red pepper.

Wipe out any excess oil from the pan and lay down one tortilla and layer it with half the shrimp, half the cheese and half the avocado mixture. Place another tortilla on top and grill until tortilla is slightly browned on both sides. Slice into 6 or 8 pieces.

Repeat with remaining ingredients and serve with sour cream and salsa.
